I use Chambord in a raspberry sauce I made for a very decadent white chocolate almond cheesecake. Drizzled over a slice of this cheesecake… yumm. This cheesecake is somethjng I get requests for a lot. Stumbled across this recipe and decided to make some. I used local honey instead of the sugar.

There are a few key differences between raspberry liqueur and chambord. For one, chambord is made with black raspberries, while raspberry liqueur is made with red raspberries. Additionally, chambord is a French liqueur, while raspberry liqueur can be made anywhere. Finally, chambord is made with cognac, while raspberry liqueur can be made with any type of alcohol. As you might expect, we’ve taken our classic deKuyper raspberry schnapps and added a touch of sweetness by using a 17% abv of sugar. I cure mine in a colder area, I’m thinking that’s why I haven’t experienced the same thing. I have tried that John and I personally don’t like it…I think at that proof it has a decidedly medicinal component. Beyond that, grain alcohol is not something every liquor store carries…best to recommend something most people can find. Try it in a refreshing Diablo made with tequila and ginger ale or a Pompier made with vermouth and club soda. Homemade raspberry liqueur is also great on top of ice cream and cake or as a dressing on a fruit salad. Combine the wafer crumbs, pecans and butter. Oh wow, I am in love with the color of this raspberry liqueur. It will add gorgeous color and flavor to any cocktail. Do also bear in mind Chambord in particular is a lot lower alcohol than this. Some bought liqueurs are diluted with raspberry juice or even just water. I'd suggest leaving it stronger and diluting as you use, as appropriate to what you are using it in. If you're thinking of making your own Chambord-like drink, this isn't going to be quite as complex a set of flavors.
Tips for Straining Liqueur
This raspberry liqueur has a very strong fruity flavor and is very tasty. The sloe or blackthorn shrub is not native to North America, but you might find it around. Homemade sloe gin is, however, extremely popular in the UK, which is where this recipe comes from. It's another easy fruit liqueur that will take a month or two before it's ready to drink.
The coffee’s bitterness adds a nice contrast to the fruitiness and sweetness of the raspberry. The raspberry liqueur adds the right amount of sweetness that combats the strong kick of the rum. It’s all too easy to lose track of the calories involved in alcohol, especially spirit drinks as they often don’t include calorific information on the label. You could also choose to invest a little more time into growing or gathering your own raspberries.
I went with a Malbec because of its balance of deep earthy flavors with plum and raisin fruitiness. But feel free to experiment with other wines—a bold Zinfandel, maybe even a crisp and fruity white wine. For homemade raspberry liqueur, you'll need a good vodka, sugar, and raspberries. Frozen raspberries are the best option because they create a richer raspberry flavor; there's no need to thaw them.

I think this is a match made in heaven. I simply put some cheesecloth in a strainer and pour it through. Finding muslin with a tighter weave then what you can find in the grocery store is a good idea. I get something called butter muslin from a store in Denver that sells products for homebrewers and it does a great job. If that’s not something you can find just double over several layers of regular cheesecloth in the strainer and let it strain through all of that. My problem is that I’m within walking distance of two pretty good wine/liquor stores.
